Not everyone knows but mushrooms really like red wine. Today we will cook honorable mushroom sauté with the blue cheese and Merlot – I promise you – with this dish you will find favour in the eyes of the most demanding guests.

How to cook:
Mince the carrot and onion. In a roasting pan melt a butter and olive oil, then add vegetables and cook 3-4 minutes. Slice the mushrooms and put them to the roasting pan. At once add salt and pepper according to your taste, add teaspoon of dry thyme. When the mushrooms will juice and it will boil down, then add wine and cook it on the medium heat with stirring during 10 minutes.
Meanwhile boil the new potatoes.
Add creams to the mushrooms, chopped gorgonzola cheese (leave some cheese for serving), grated parmesan and stir till the cheese will melt.
Mix potatoes with the mushroom sauté and decorate it with gorgonzola cheese that you left, fresh thyme and other herbs. Immediately serve it with glass of Merlot!

P.S. These mushrooms can be also served with pasta, as mincemeat to pancakes and just with baguette.
