February 14 is celebrated a holiday of winegrowers in the Balkans - "Trifon Zarizan". According to the tradition, on this day (Feb. 14) the vines were clipped with the aim of getting a great harvest in autumn, that is why in Bulgaria St. Trifon is called Zarezan (undercut). Now the feast day of St. Tryphon is celebrated not only by the husbandmen but also by the gardeners, truck farmers and owners of wine taverns.
The tradition of celebration Trifon Zarezan was resurrected in Krynychne village by Plachkov family. This day Ivan Plachkov invites all winemakers of the region, European experts, sommeliers, restaurateurs, and makes the first symbolic vines trimming. This process is accompanied with a Bulgarian ethnic music and dance. The first trimming of vines is sanctified by Orthodox Church. This holiday always brings not only symbolic, but also informational and educational character (exchange of experience between Ukrainian and foreign winemakers.
