Bessarabiko Balsamic Vinegar by Kolonist

Bessarabiko Balsamic Vinegar adds elegance and depth to any dish. For centuries, balsamic vinegar has been used as a sauce for meat and fish, vegetable and fruit salads, soft and hard cheeses, and even desserts such as ice cream. It is also widely used for marinades and gourmet dressings.

Traditionally, balsamic vinegar was valued not only for its taste but also for its beneficial properties. Its name comes from the word “balm”, as it was once used to strengthen immunity, reduce inflammation, and support overall health.

A Unique Ukrainian Product

Bessarabiko is the first balsamic vinegar produced in Ukraine by Kolonist Winery, located in the fertile region of Danube Bessarabia. This area is known for its rich soils and ideal climate for growing high-quality grapes.

Kolonist created Bessarabiko as part of its philosophy of craftsmanship, sustainability, and deep respect for local terroir. The vinegar is made from premium grape juice and enriched with natural honey, which adds softness, balance, and a distinctive flavor compared to classic balsamic vinegars.

Traditional Production Method

Bessarabiko is produced using biological fermentation of cooked grape must and aged for 4 years. This slow, natural process allows the vinegar to develop complexity, density, and harmony of sweet and sour notes.

Inspired by traditional Italian balsamic techniques, Kolonist combines classic knowledge with modern quality standards. Every stage of production is carefully controlled to preserve natural aromas, nutrients, and authenticity.

Interesting fact!

The most expensive balsamic vinegar is considered to be the one aged in juniper barrels. Today, such barrels are no longer produced, as juniper was added to the Red Book of endangered species in Europe, including Ukraine, about 20 years ago. Moreover, making one barrel requires a tree trunk at least half a meter in diameter, which means using very old trees.

Today, juniper barrels can only be found at centuries-old wineries in Italy. These barrels are over 20 years old, and the vinegar aged in them becomes thick and resin-like, with a remarkable juniper aroma and a sweet-and-sour taste reminiscent of honey and sometimes dark chocolate, with well-balanced, subtle acidity.

Such balsamic vinegar is almost impossible to buy, as very little remains. It is considered a family heritage and a true treasure passed down through generations.

Bessarabiko has a deep brown color, silky texture, and balanced sweet-and-sour profile. Its flavor is rich, layered, and long-lasting, making it highly versatile in the kitchen.

It pairs perfectly with:

Traditional balsamic vinegar contains vitamins A, C, and B-group, as well as iron, potassium, calcium, and phosphorus. It acts as a natural antioxidant, supports digestion, improves metabolism, and helps cleanse blood vessels.

Thanks to its natural fermentation and aging, Bessarabiko retains valuable bioactive compounds. It is best used without heat treatment to preserve its beneficial properties.

Inspired by Italian Tradition

The homeland of classic balsamic vinegar is Modena, Italy, where families have produced it for generations. Kolonist studied Italian methods and adapted them to Ukrainian terroir, creating a competitive, high-quality product with its own identity.

Founders Ivan and Alla Plachkov personally explored traditional balsamic production in Italy before launching Bessarabiko. Their goal was to create a Ukrainian balsamic vinegar that meets international standards and reflects local character.
